The shelter is a place of small, nourishing work. Here, milk becomes cream, cream becomes butter, and simple curds become soft cheese for the table.

Nothing is hurried. Nothing is wasted. What is made here is humble, useful, and deeply comforting.

✧ What the Shelter Offers

This is a place of simple making — close to the rhythm of daily life, and rich in the quiet usefulness of good ingredients.

✧ Milk & Cream

Fresh milk is one of the shelter’s quiet treasures. Some is used as it is; some is left to settle, allowing the cream to rise slowly to the top.

Cream brings richness to soups, puddings, baking, and soft sauces — but it also marks the beginning of butter, one of the simplest and most satisfying transformations.

✧ Butter

Butter begins with cream and a little patience. Here in the shelter, it is made simply and used fresh — shaped by hand and shared at the table.

Churn, whisk, or shake the cream until it separates into golden butter and thin buttermilk. Rinse well in cold water, then shape and chill.

✧ Simple Herb Butter

Mix together gently, then chill until firm. Lovely on warm bread, potatoes, vegetables, or stirred through simple dishes just before serving.

✧ Soft Cheese

Fresh cheese is one of the simplest things to make from milk. In the shelter, it is prepared gently and eaten fresh — sometimes plain, sometimes with herbs or honey.

✧ Quick Soft Cheese

Warm the milk gently, stir in the lemon juice or vinegar, and let the curds separate. Strain through a clean cloth, season lightly, and use fresh.

✧ A handful of chopped herbs can be stirred through the finished cheese for a softer, savoury version. A little honey makes a sweeter one.

✧ Nothing Wasted

The shelter keeps to an old wisdom: use what is given fully and kindly.

Even the by-products have their place. Very little needs to be thrown away.

Dairy asks for cleanliness, coolness, and attention. Bowls, cloths, jars, and hands should all be kept carefully, and everything used fresh where possible.
